We had a few potatoes and some broccoli that needed to be cooked and eaten before they ended up in the compost bin so I decided to make a pot pie. Usually I just make either a beef or chicken stew and bake it with pastry or top it with biscuits. However, recently I had read on allrecipes.com that a "chicken pot pie" that is 100% chicken with a sauce identical to the one used in my recipe for "chicken divan" was very popular with users of their site. Since the my Chicken Divan recipe calls for chicken, broccoli, and the same sauce I decided to try and combine the two recipes and make a new pot pie. For another change instead of baking the thing in a 9x13" stoneware casserole I decided to use my enameled cast iron dutch oven. I cooked potatoes, carrots, onions, and chicken; then I made a white sauce to which I added 1 can of cream of chicken soup, some sour cream, a bit of mayonnaise, salt, and pepper (the Chicken Divan sauce is 1 can cream of chicken soup, 1 cup sour cream, 1 cup mayonnaise, 1/2 cup grated cheddar cheese, 1/2 teaspoon curry powder). The dutch oven was lined with homemade pie crust, I spooned in the vegetables and the chicken in layers alternating with fresh broccoli flowerets (I did not cook the broccoli in advance) and poured the sauce over everything then topped it off with another pie crust. This was baked in a 400 degree oven for 1 hour. Dinner received rave reviews from everyone - even Daniel who is typically our pickiest eater. In fact, Daniel said he was tired, that he had "been eating all day long and would not be eating again tonight" and had crawled into bed. Joshua told him that I had made pot pie and he was suddenly starving and quite alert - needless to say he came down for dinner. It worked out well - the bottom crust was flakier than usual; I imagine that is a result of baking it in a dutch oven since the cast iron seems to get hotter and retain heat longer than the stoneware. I'll probably do it again this way in the future.

The pie looks great and sounds yummy. I've been thinking of bringing my dutch oven to mom's, but she's got a glass topped stove too. Where did you buy yours and how much did it cost.
